Blackened Mahi Mahi has incredible flavor! You can eat it alone, or use it in blackened Mahi Mahi tacos. But, knowing how to easily blacken Mahi can sometimes be challenging. This method ensures you get a nice crispy blackened crust, however, it can also leave you with a smoky kitchen!

If you aren’t comfortable cooking with cast iron, or do not own any cast iron skillets, that tutorial wouldn’t work for you. But, you can blacken Mahi Mahi using just a simple sheet pan and your oven! This recipe will walk you through how to easily blacken Mahi in the oven

Ingredients needed

  • 4 Mahi Mahi fillets – thawed
  • 3 Tbsp. olive oil
  • 1 tsp. garlic powder
  • 1 tsp. oregano
  • 1/2 tsp. cayenne pepper
  • 1 tsp. smoked paprika
  • 1 tsp. onion powder
  • 1 tsp. cumin
  • 1/2 tsp. black pepper
  • 1/2 tsp. salt

How to blacken Mahi Mahi

  1. Preheat oven to 450 degrees F.
  2. Line a sheet pan with foil and coat with 3 Tbsp. of olive oil.
  3. Lay the thawed Mahi Mahi fillets onto the oil.
  4. In a small bowl, combine the blackening spices and mix to combine.
  5. Thoroughly coat both sides of the Mahi Mahi fillets with the seasoning mixture.
  6. Bake for 10-12 minutes or until flaky, and the internal temperature reaches 137 degrees F.
  7. Remove from oven and serve immediately. Serve with your favorite aioli, like this roasted chili aioli, or remoulade sauce.

Recipe FAQs and Variations

Is blackened fish burnt?

No! It may look burnt, but the blackened color is actually the charred spices combined with the cooking oil.

Is blackened seasoning hot?

This blackened seasoning in particular does carry a little kick of heat, but it’s not intolerable.

Will blackened Mahi Mahi get crispy in the oven?

While you’ll still get the delicious flavors of blackened Mahi in the oven, you won’t get a crispy outside crust when oven-baking. To get that crust, you’ll need to pan sear, which I show you how to do in my how to blacken Mahi Mahi tutorial.
